Meatball Sub Casserole

Music by: Jason Shaw www.youtube.com 1/4 cup seasoned bread crumbs 1 pound ground beef 1 loaf Italian Bread cut into 1 inch slices 1- 8oz package of cream cheese softened 1/2 cup mayonnaise 1 tsp Italian seasoning 1/4 tsp pepper 2 cups grated mozzarella cheese divided 1 jar pasta sauce In a bowl combine crumbs and meat and form into 1″ meatballs. Bake meatballs in the oven at 400F for 15-20 minutes until they are done (no longer pink in the middle). Meanwhile, arrange bread in a single layer in a greased 13″x9″ baking dish. Combine cream cheese, mayo and Italian seasonings and pepper. Spread over the bread. Sprinkle with half the cheese. Combine meatballs and sauce. Spoon meatballs and sauce over bread and sprinkle remaining cheese over top. Bake at 350F for 30 minutes until heated through and cheese is melted.

  • In a search for a good low carb bread alternative that I can make easily without a bread machine, I found this great recipe by Jennifer Eloff (www.sweety.com It's best toasted, but also makes a mean french toast as well. It holds up well to being dunked as well as holding your sandwich together. Fast Cheesebread low-carb-news.blogspot.com 1 cup ground almonds 2/3 cup gold flax meal 1/3 cup vital wheat gluten 1/3 cup vanilla whey protein 4 tsp baking powder 1 cup Shredded Cheddar cheese 1/4 cup butter 2 eggs 1/2 cup heavy cream/water mixture Mix Dry ingredients together in large bowl. Cut in the butter. In a separate dish, beat eggs and then add the heavy cream mixture. Stir egg/cream mixture into the dry ingredients just until mixed. Scrape into 8×8 well-greased baking pan. Cook at 350 for 35-45 minutes until inserted knife comes out clean. Once done, let cool, and cut the bread into quarters. Each quarter is further cut into 3 slices. Yield: 12 slices, 1 slice: 152 calories: 10g protein; 12 g fat; 2.25 g carbs

  • Cheesy Garlic Toast with Home Made Bread Recipe Bread: 1-1/3 cup 110 degree water 1 tablespoon sugar 1 package yeast (1/4 oz.) Mix and wait 15 minutes until foamy 4 cups flour 1 tablespoon salt 2 tablespoons olive oil Add water and yeast to flour, salt and olive oil. Mix until it forms a ball in the bowl. RECIPE: riginal Recipe Yield 14 servings Ingredients 2 1/4 cups all-purpose flour 1 tablespoon pumpkin pie spice (SUBSTITUTION: 2 tablespoons cinnamon) 2 teaspoons baking powder 1/2 teaspoon salt 2 eggs 2 cups white sugar 1 (15 ounce) can pumpkin puree 1/2 cup vegetable oil 1 cup dried cranberries 1/4 cup canned cranberry sauce 1 cup chopped walnuts (OPTIONAL) DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9×5 inch loaf pans (or 4 mini loaf pans). 2. In a mixing bowl, combine flour, pumpkin pie spice, baking powder and salt. 3. Combine eggs, sugar, pumpkin and oil in small mixing bowl, beat until just blended. Stir the wet mixture into the dry with a wooden spoon until batter is just moistened. Fold the cranberries and walnuts into the batter. Spoon the batter into the prepared loaf pans. 4. Bake in preheated oven for 50 to 60 minutes.   • Betty’s Buttery Croutons Recipe

    In this video, Betty makes her scrumptious Buttery Croutons. These are just toasted, buttered bread cubes, but you can add any flavor that you like. You will enjoy them with any green salad, or you can use them in dressing, meatloaf, and many other recipes. Ingredients (for the amount I demonstrated): 4 slices white bread, including crust (You may use whole grain bread, and you may use as many slices as you need for the amount of croutons you want.) 4 tablespoons butter, softened to room temperature (or as needed) If convenient, freeze your loaf of sliced bread at least overnight. When you are ready to make your croutons, separate out as many slices of bread as you need. Now, spread both sides of frozen bread slices with a thin layer of butter. (You may leave the butter off, if you are watching fat and calories.) As the bread is buttered, you may add garlic powder, dried herbs, etc. to fit your taste, although these are very good plain. Next, (while the bread is still frozen, use a knife to slice vertically and horizontally, forming cubes of buttered, frozen bread. Place the cubes in a single layer in a shallow baking pan. Use more than one pan, if needed. Bake for about 15 minutes, stirring every 5 minutes. Watch closely, so that the croutons do not get overly brown. When the croutons are golden and crisp, remove them from the oven. Let cool. Place in a tightly covered container to store. Use as desired, with salads or in other recipes!
