  • In this video, Betty demonstrates how to make Bundt-Style Banana Bread. It is a luscious treat that is baked in a Bundt cake pan. This recipe came from my good friend, Lynn, who has wonderful, tasty, and gorgeous recipes! Ingredients: 3 ripe bananas, mashed ½ cup vegetable oil 2 eggs, well-beaten Splash of vanilla 2 cups sugar (I reduced this to 1 ½ cups.) 2 cups self-rising flour 1 cup chopped nuts, optional (I omitted the nuts.) cooking oil spray In a large mixing bowl, combine 3 mashed ripe bananas, ½ cup vegetable oil, 2 well-beaten eggs, and a splash of vanilla. Add 1 ½ to 2 cups of sugar, 2 cups of self-rising flour, and 1 cup chopped nuts, if desired. Use a strong spoon, and mix all together really well. Pour into a Bundt pan that has been sprayed with cooking oil spray. Bake at 350 degrees to 45 minutes to 1 hour. This Bundt-Style Banana Bread has a really crispy and delicious crust. This makes a terrific afternoon treat with coffee or will make a quick breakfast when you’re on the go. It is a great snack anytime! Thanks for another great recipe, Lynn! –Betty 

  • In this video, Betty demonstrates how to make Grilled Pepperoni-Pesto Sandwiches. These are made with sliced Italian bread, filled with mozzarella cheese, pesto sauce, pepperoni, and pizza sauce, and then grilled to perfection on a stove top. Ingredients (for 4 sandwiches): about 8 oz. sliced mozzarella cheese, or as desired (8) 1-inch thick slices Italian bread ¼ cup pizza sauce ¼ cup pesto sauce 20 to 24 slices pepperoni 2 tablespoons butter, softened For one sandwich: Place 1 cheese slice on top of a slice of Italian bread. Spread evenly with pizza sauce. Top with another cheese slice, and spread evenly with pesto sauce. Top with another slice of cheese, and arrange 5 or 6 pepperoni slices over the top. Top with another cheese slice and finish the sandwich with a second slice of Italian bread. Spread a small amount of butter on top of the sandwich. Invert the sandwich onto a hot nonstick skillet or griddle, and cook over medium heat until browned. Spread a small amount of butter on the ungrilled side of the sandwich. Turn, and cook until brown.     Simple Banana Bread Recipe Ingredients 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter 3/4 cup brown sugar 2 eggs, beaten 3 mashed bananas Juice from 1/2 lemon Directions 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan. 2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. 3. Bake in preheated oven for 55 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

  • Visit www.pinoy-recipes.com for more mouthwatering Pinoy recipe. Flat bread is a very simple recipe, very easy to make, and yet very tasty. The best thing about this is that you made it yourself. I am not a baker, but it makes me feel good if I can do something as good as this flat bread. You can actually call this is an all-purpose dough because you can use it as a pizza dough, or if you want, shape it like a french bread, then proof it longer, bake it in the oven, and there you have a french bread. This dough recipe can be used as a tortilla or you can also use this for empanada. I love pizza and this is how I make my pizza dough. With the measurement from the recipe, I can make 3 family-sized pizzas. If you think you made too much dough, do not worry because you can freeze it for future use. On the cream cheese spread, I discovered that cream cheese goes really well with onion and jalapeno peppers. I have been doing this for quite a while now and Nunnie really likes it. For those who does not like onion that much, you can use just a little bit and chop it really really fine. On this video recipe, we used some more cheese which are the cheddar and mozzarella, but if you have some pepper jack cheese, that will really go well with this cream cheese spread. We also had some shredded grilled chicken but that is optional. Nunnie likes it with grilled chicken, I like it with just the cream cheese spread.   • In this video, Betty demonstrates how to make her Sumptuous Steak Parmesan. This lovely entrée is made by browning tenderized sirloin steak, spreading it with Italian Sauce, and baking it in the oven. It is then topped off with shredded Parmesan cheese. Delicious! ½ cup dry bread crumbs ½ cup finely shredded Parmesan cheese, divided 1 large egg, well beaten 1 tablespoon water 1/8 teaspoon freshly ground black pepper 4 cubed (tenderized) sirloin steaks (about 1 pound) ¼ cup peanut oil cooking oil spray 1 cup pizza sauce In a medium-sized shallow bowl, combine 1/2 cup breadcrumbs and ¼ cup finely shredded Parmesan cheese and set aside. In another medium-sized shallow bowl, combine1 well-beaten egg, 1 tablespoon of water, and 1/8 teaspoon freshly ground black pepper. Dip each cubed sirloin steak in egg mixture, and then dredge in breadcrumb mixture. Heat ¼ cup peanut oil in a large skillet. Brown steaks in hot oil over medium heat, cooking 3 minutes on each side. Place the 4 browned steaks in a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Spread 1 cup pizza sauce over the top. Bake at 325 degrees for 20 minutes, or until done. Remove steaks from oven, and sprinkle with the remaining ¼ cup shredded Parmesan cheese. Serve immediately. I served my Sumptuous Steak Parmesan with a green salad, spaghetti (prepared from a boxed mix), Cheesy Garlic Aioli French Bread, Spice Cake with Spiced Buttercream Frosting—and a glass of iced tea!   • In this video, Betty demonstrates how to make luscious Cheesy Garlic Aioli French Bread. This is a loaf of French bread that you can pick up from your bakery, slice it in half lengthwise, spread it with Garlic Aioli Sauce (from yesterday’s upload), and brown it in the oven. It is scrumptious! Ingredients: 1 loaf French bread (You may use home baked bread or pick up a baked loaf at your deli or bakery.) garlic aioli sauce, enough to spread 2 halves of a loaf of French bread (You will find the recipe for garlic aioli sauce in bettyskitchen.) ¼ cup shredded Parmesan cheese ¼ cup chopped fresh flat-leaf Italian parsley Slice 1 loaf of French bread in two equal halves, lengthwise. (This is easier to do when the bread is slightly frozen.) Spread the cut side of each half with garlic aioli sauce. (Note: This sauce is *very* flavorful, so you will not need to spread it very thick.) Sprinkle ¼ cup shredded Parmesan cheese over both halves of the aioli-spread bread halves. Sprinkle ¼ cup chopped flat leaf Italian parsley over the top of the cheese. Bake at 350 degrees until crisp around the edges and beginning to brown. Remove from oven, place on serving dish, and serve immediately! This bread tastes wonderful alone, but I used it to round out an Italian-style dinner. Enjoy!!! –Betty 
