Betty’s Buttery Croutons Recipe

In this video, Betty makes her scrumptious Buttery Croutons. These are just toasted, buttered bread cubes, but you can add any flavor that you like. You will enjoy them with any green salad, or you can use them in dressing, meatloaf, and many other recipes. Ingredients (for the amount I demonstrated): 4 slices white bread, including crust (You may use whole grain bread, and you may use as many slices as you need for the amount of croutons you want.) 4 tablespoons butter, softened to room temperature (or as needed) If convenient, freeze your loaf of sliced bread at least overnight. When you are ready to make your croutons, separate out as many slices of bread as you need. Now, spread both sides of frozen bread slices with a thin layer of butter. (You may leave the butter off, if you are watching fat and calories.) As the bread is buttered, you may add garlic powder, dried herbs, etc. to fit your taste, although these are very good plain. Next, (while the bread is still frozen, use a knife to slice vertically and horizontally, forming cubes of buttered, frozen bread. Place the cubes in a single layer in a shallow baking pan. Use more than one pan, if needed. Bake for about 15 minutes, stirring every 5 minutes. Watch closely, so that the croutons do not get overly brown. When the croutons are golden and crisp, remove them from the oven. Let cool. Place in a tightly covered container to store. Use as desired, with salads or in other recipes!   • In this video, Betty demonstrates how to make Parmesan Cheese Crisps that are similar to the ones that came with Rick’s Caesar salad he ordered at Beaumont Inn at our 40th Wedding Anniversary dinner. You can serve these with any salad, or just eat them as a snack, with no accompaniment. They’re great! Ingredients (for about 12 crisps): 1 cup finely shredded Parmesan cheese (You may use a different type of cheese, if you prefer.) In a large, shallow baking pan place about 12 circles of shredded Parmesan cheese. Try to make them compact, but do not mound them up. Place in a 300 degree oven, just long enough for the cheese to melt, and for the cheese crisps to begin to brown around the edges, about 8 minutes. Immediately remove them from the oven, and quickly transfer them (gently) to a cooling rack (or a flat tray). Let them cool completely. Place them on a nice serving dish, or arrange them to the side of any green salad. Delicious!!! –Betty :)

    Hi Guys, Mixing it up a little.. in the kitchen of course! Going to show you how to make a Tasty Omelet from the Healthy Skin Diet by Karen Fischer - for those of you who don’t know I’m following an 8 week eating program for clearer skin! This recipe can be for breakfast, lunch, dinner, brunch - super versatile and super tasty! Stuff you will need : Chopping Board, Teaspoon, 2 x Small Bowls, Fork, Knife, Fry Pan, Sauce Pan Lid, Plate, Egg Flip and Utensils. Food - 1 x Teaspoon Extra Virgin Olive Oil, 1/2 Tomatoe diced, Handfull of Baby Spinach or Baby Rocket, 1/4 of Red Onion diced, 2 x Free Range Eggs, 1 x Teaspoon of Water, 1/4 Teaspoon of Tamari or Salt Reduced Soy Sauce, 1 x Teaspoon of Sweet Chilli Sauce and Pepper. Serves: 1 COOKING TIME FOR OMELET : 3 - 4 mins on a medium heat, but check every so often to make sure it’s not burning.     Super Bowl Corn Dogs Recipe

    In this video, Betty demonstrates how to make her quick and easy Super Bowl Corn Dogs. With just the right amount of cornmeal batter coating, these hot dogs go into hot oil and are quickly ready to drain and serve with mustard. These Super Bowl Corn Dogs are SUPER! Ingredients: 1 egg, well-beaten 1/2 cup cornmeal 1/2 cup self-rising flour 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1/2 cup milk 2 tablespoons melted butter or margarine, cooled 1 pound hot dogs (I used a package of 10 Oscar Mayer wieners.) mustard for dipping (I used Herlocher’s Dipping Mustard, but you may use any mustard that you like.) peanut oil (I placed about 1 inch of peanut oil in a cast iron skillet for frying the corn dogs.) In a large mixing bowl, combine 1 well-beaten egg, 1/2 cup cornmeal, 1/2 cup self-rising flour, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, 1/2 cup milk, and 2 tablespoons melted butter or margarine. Mix until smooth. Dip hot dogs into batter and drain. (I used a metal rack for draining.) Fry in hot oil (350 to 375 degrees) 2 to 3 minutes, or until golden brown on all sides. Drain on paper towels, and then place hot corn dogs on a serving plate. You may insert wooden sticks, in order to serve the corn dogs without messing up any dishes, or provide small plates and forks. Serve with dipping mustard. These are SUPER, and I hope you enjoy them!!! –Betty :)
