Instead of using 2 Cups of sugar you can use dates. 5 dates:1 tamarind. This will make very good tamarind chutney ‘without’ sugar.

First of all it wont be consumed right away, it’s probably worth 30-40 servings.
So much of sugar is used because tamarind is too tangy, that’s the amount it will probably take to sweeten.
Second, you can use ’stevia’, best sweeteneer on earth. Plant based. Safe for diabetics, kids. It’s an herb. 8 times sweeter than sugar.
And of course, you can always use dates.

I love Imli Chutney! Thank you for posting the recipe. I have never made it where you take the tamarind pulp back out. Instead, it was made with tamarind paste concentrate. The paste dissolves in boiling water; but otherwise, it is very similar. Thank you again!

there is no substitute for roasted cumin, you can do without it but this does provides lot of flavor to chutney

To make tamrind paste, I put the saoked tamrind in microwave for 1 min and then in food processor and then strain it. there is less wastage.
