2 1/2 pounds of pork shoulder, cut in 3/4 inch cubes
1 teaspoon of ground Greek oregano
1/2 teaspoon of freshly ground pepper
1 tablespoon of sea salt
2 tablespoons of red wine (or good red wine vinegar)
2 tablespoons of olive oil
In a bowl, pour wine (or vinegar) and oil over the pork and toss to coat. Sprinkle salt, pepper, and oregano, and toss again. Cover and refrigerate for at least 2 hours.

Hi. I make the … Hi. I make the souvlaki in a pan with a hint of olive oil ( let it get hot first ) then ”grill” the pork pieces, use salt, black pepper and oregano. As for the pita, heat it up on the same pan you made the souvlaki. Also tzatziki is a must and we don’t use pickles in greece. Cheers
Thank you for the … Thank you for the tip. I have made it similar to your descriptiom including the heating of the piti in the pan (the flavours really blend into the piti that way). Not sure where the pickles came from but they always seem to be on the ones I get here from the shops. Damn tasty food though, one of my favourites. thank you again very much! cheers!
